300g fresh udon noodles

3 tablespoons chili oil

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon sugar

1 green onion, thinly sliced

1 tablespoon toasted sesame seeds

Optional: Fresh cilantro for garnish

Optional: 100g cooked protein (tofu, chicken, or shrimp)

Instructions
 

Boil the Udon: Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions (typically around 3 minutes for fresh noodles). Drain and rinse under cold water to stop the cooking process.

    Prepare the Sauce: In a bowl, combine the chili oil, minced garlic, soy sauce, rice vinegar, sesame oil, and sugar. Mix well until the sugar is dissolved.

      Mix the Noodles: In a large mixing bowl, add the drained udon noodles. Pour the chili oil sauce over the noodles and toss well to coat.

        Add Toppings: If using, add the cooked protein to the noodles and gently mix. Top with sliced green onions and toasted sesame seeds.

          Serve: Transfer the noodles to serving bowls. Garnish with fresh cilantro if desired, and serve immediately.
