2 medium zucchini, sliced into 1/4-inch thick rounds

2 medium yellow squash, sliced into 1/4-inch thick rounds

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 eggs, beaten

Instructions
 

Prep the Squash: Rinse the zucchini and yellow squash under cold water. Slice them into 1/4-inch thick rounds and set aside.

    Make the Coating: In a shallow bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to ensure the spices are evenly distributed.

      Prepare the Dipping Station: In another shallow bowl, beat the eggs. This will be used to dip the squash for the breadcrumb coating.

        Coat the Squash: Take each slice of squash and dip it into the beaten eggs, allowing any excess to drip off. Then, dredge the slice in the breadcrumb mixture, pressing lightly to ensure an even coating. Place the coated slices on a plate or baking sheet.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

            Air Fry the Squash: Lightly spray the air fryer basket with olive oil. Arrange the coated squash slices in a single layer in the basket. It's best not to overcrowd; if necessary, do this in batches. Spray the top of the squash lightly with more olive oil.

              Cook: Air fry the squash at 400°F (200°C) for 10-12 minutes. Check halfway through and shake the basket or flip the squash slices to ensure even browning. They should be golden brown and crispy.

                Serve: Carefully remove the squash from the air fryer and let them cool for a couple of minutes. Serve warm as a delightful appetizer or side dish.
