2 medium apples, peeled and finely chopped (preferably Granny Smith)

1 cup all-purpose flour

1/3 cup granulated sugar

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup milk

1 large egg

1 tsp vanilla extract

Oil, for frying

Powdered sugar, for dusting

Instructions
 

In a medium bowl, combine the chopped apples, flour, sugar, baking powder, cinnamon, and salt. Mix well until the apples are evenly coated with the dry ingredients.

    In another bowl, whisk together the milk, egg, and vanilla extract until fully combined.

      Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay.

        In a deep saucepan or frying pan, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

          Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.

            Once cooked, use a slotted spoon to remove the fritter bites and transfer them to a plate lined with paper towels to drain excess oil.

              While still warm, dust the fritter bites with powdered sugar.
