1 lb ground beef (preferably lean)

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 small onion, finely chopped

1 red bell pepper, finely diced

1 cup water chestnuts, diced (canned or fresh)

3 green onions, sliced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

1 head of lettuce (Bibb, Boston, or iceberg) for wrapping

Optional toppings: chopped cilantro, chopped peanuts, lime wedges, Sriracha sauce

Instructions
 

Cook the Beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess grease if necessary.

    Sauté Aromatics: Add the minced garlic, ginger, and chopped onion to the skillet with the ground beef. Cook until the onion becomes translucent, about 3-4 minutes.

      Add Vegetables: Stir in the diced red bell pepper and water chestnuts. Cook for an additional 2-3 minutes until the vegetables start to soften.

        Season the Mixture: Reduce the heat to medium and add the soy sauce, hoisin sauce, rice vinegar, sesame oil, salt, and pepper. Mix well to combine all ingredients and cook for another 2-3 minutes for the flavors to meld.

          Assemble Wraps: Remove the skillet from heat. To serve, spoon a generous amount of the ground beef mixture into the center of each lettuce leaf. Top with sliced green onions, and any optional toppings such as chopped cilantro or peanuts.

            Enjoy: Squeeze a little lime juice over the wraps if desired, and serve with a side of Sriracha for those who enjoy a bit of heat.
