Authentic Jamaican Curry Chicken

Ingredients
  

2 lbs chicken pieces (thighs and drumsticks preferred)

2 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

3 tablespoons vegetable oil

1 large onion, chopped

2 cloves garlic, minced

1-inch piece of ginger, minced

2-3 sprigs fresh thyme (or 1 teaspoon dried thyme)

1 Scotch bonnet pepper (whole for mild spice, chopped for more heat)

2 carrots, sliced

1 bell pepper (red or green), chopped

4 stalks green onions, chopped

3-4 medium potatoes, quartered

3 cups chicken broth (or water)

1 can (14 oz) coconut milk

1 tablespoon soy sauce (optional)

Juice of 1 lime

Instructions
 

Marinate the Chicken: In a large bowl, mix the chicken pieces with the Jamaican curry powder, allspice, salt, black pepper, and lime juice. Let it marinate for at least 1 hour, preferably overnight in the refrigerator for full flavor.

    Sear the Chicken: Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the marinated chicken pieces in batches and brown them on all sides (about 5-7 minutes). Remove and set aside.

      Sauté the Aromatics: In the same pot, add chopped onion, garlic, and ginger. Sauté until the onion is translucent and fragrant, about 5 minutes.

        Add Vegetables and Spices: Stir in the thyme, Scotch bonnet pepper, carrots, and bell pepper. Cook for an additional 3-4 minutes until the vegetables start to soften.

          Combine Ingredients: Return the browned chicken to the pot. Add the quartered potatoes, soy sauce, chicken broth, and coconut milk. Stir well to combine all ingredients.

            Simmer the Curry: Bring to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally, and adjust seasoning if needed.

              Serve: Once done, remove the Scotch bonnet if you used it whole. Serve the authentic Jamaican curry chicken hot over steamed rice or with traditional Jamaican rice and peas.
