1 cup all-purpose flour

1/2 cup boiling water

1/4 tsp salt

1/2 lb ground pork (or chicken)

1/4 cup finely chopped green onions

1 tbsp soy sauce

1 tsp sesame oil

1 tsp minced ginger

1/2 tsp garlic powder

1/2 tsp black pepper

For the Soup:

4 cups chicken broth

1 tbsp soy sauce

1 tbsp chili paste (adjust to taste)

1 tsp sesame oil

1/2 cup sliced shiitake mushrooms

1/2 cup bok choy, roughly chopped

1 cup bean sprouts

Fresh cilantro, for garnish

Sliced chili peppers, for garnish (optional)

Make the Dumpling Dough: In a mixing bowl, combine the flour and salt. Slowly add boiling water while mixing with chopsticks or a fork until a smooth dough forms. Knead the dough on a lightly floured surface for about 5 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling: In a large bowl, mix the ground pork, green onions, soy sauce, sesame oil, ginger, garlic powder, and black pepper until well combined.

      Form the Dumplings: Divide the rested dough into small portions (about the size of a golf ball). Roll each portion into a thin circle. Place a teaspoon of filling in the center and fold the dough over to make a half-moon shape. Pinch the edges to seal tightly. Repeat until all dough and filling are used.
