Baked Feta Pasta

200g (7 oz) of feta cheese block

300g (10.5 oz) of penne pasta

2 cups cherry tomatoes, halved

1/2 cup extra virgin olive oil

4 cloves garlic, minced

1 tsp red pepper flakes (adjust for heat preference)

1 tsp dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Baking Dish: In a large baking dish, add the halved cherry tomatoes and place the block of feta cheese in the center.

      Season It: Drizzle the feta cheese and tomatoes with olive oil, then sprinkle minced garlic, red pepper flakes, dried oregano, salt, and pepper over the top. Ensure everything is evenly coated.

        Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the feta is soft and slightly golden, and the tomatoes are bursting.

          Cook Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

            Combine: Remove the baking dish from the oven and use a fork to mash the feta and mix it with the tomatoes to create a creamy sauce. Add the cooked penne to the baking dish and toss everything together. If the sauce is too thick, add pasta water a little at a time until you reach your desired consistency.

              Serve: Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired. Serve immediately and enjoy!
