Create your own scrumptious Bang Bang Chicken Bowl at home! This recipe features crispy, panko-breaded chicken thighs served over fluffy jasmine rice and topped with fresh veggies like shredded cabbage and carrots. 1 lb (450g) boneless, skinless chicken thighs

1 cup cornstarch

2 large eggs, beaten

1 cup Panko breadcrumbs

2 tbsp vegetable oil (for frying)

1 cup cooked jasmine rice

1 cup shredded cabbage (green or purple)

1/2 cup shredded carrots

1/4 cup green onions, sliced

Sesame seeds, for garnish

Fresh cilantro, for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tbsp lime juice

Salt and pepper to taste

Prepare the Bang Bang Sauce: In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper until smooth. Adjust sriracha to taste if you prefer more heat. Set aside.

    Prep the Chicken: Cut the chicken thighs into bite-sized pieces. Season lightly with salt and pepper.

      Breading Station: Set up a breading station with three shallow bowls. Place cornstarch in the first bowl, beaten eggs in the second, and Panko breadcrumbs in the third.

        Bread the Chicken: Dredge each chicken piece in cornstarch, shaking off the excess. Dip into the beaten eggs, and finally coat with Panko breadcrumbs. Ensure they are well-coated.

          Fry the Chicken: In a large skillet or frying pan, heat the vegetable oil over medium heat. Once hot, carefully add the coated chicken pieces in batches, frying for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.
