For the Chicken:

2 large chicken breasts, diced into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper, to taste

Oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tsp lime juice

For the Bowl:

2 cups cooked jasmine rice or brown rice

1 cup shredded lettuce

1 cup diced cucumbers

1/2 cup shredded carrots

1/4 cup cilantro, chopped

1/4 cup chopped scallions

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, soak the diced chicken in buttermilk for at least 30 minutes to tenderize and flavor.

    Prepare the Coating: In a separate bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and pepper.

      Heat the Oil: In a large skillet or deep fryer, heat oil over medium-high heat (about 350°F/175°C).

        Coat and Fry the Chicken: Remove the chicken from the buttermilk, letting any excess drip off. Dredge the chicken pieces in the flour mixture, making sure they are evenly coated. Fry in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

          Make the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until well combined. Adjust the amount of sriracha based on your heat preference.
