Ingredients
  

1 lb (450g) boneless, skinless chicken breasts

1 cup cornstarch

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1 egg

1/4 cup milk

Vegetable oil for frying

2 cups cooked jasmine rice

1 cup shredded lettuce

1 cup cucumber, diced

1/2 cup shredded carrots

1/2 cup edamame (shelled)

1 avocado, sliced

1/4 cup green onions, sliced

1/4 cup sesame seeds

For the Bang Bang Sauce:

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spice)

1 tbsp honey

1 tsp rice vinegar

Instructions
 

Prepare the Chicken: Cut chicken breasts into bite-sized pieces. In a bowl, combine cornstarch, salt, black pepper, garlic powder, and onion powder.

    Dredge the Chicken: In another bowl, beat the egg with milk. Dip each piece of chicken into the egg mixture, then coat evenly with the cornstarch mixture.

      Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through (about 4-5 minutes per side). Remove and drain on paper towels.

        Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth. Adjust seasoning to your preference.
