1 lb (450g) boneless, skinless chicken breasts

1 cup corn starch

2 large eggs, beaten

1 cup Panko breadcrumbs

½ tsp salt

¼ tsp black pepper

1 cup shredded lettuce

1 cup cherry tomatoes, halved

1 avocado, sliced

½ cucumber, thinly sliced

¼ cup green onions, chopped

Sesame seeds, for garnish

½ cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp lemon juice

Instructions
 

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Season with salt and pepper.

    Set Up Breading Station: Prepare three shallow bowls – one with corn starch, one with the beaten eggs, and the last with Panko breadcrumbs.

      Bread the Chicken: Dredge each piece of chicken in corn starch, shaking off the excess. Dip into the beaten eggs, then coat thoroughly with Panko breadcrumbs.

        Fry the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Add the breaded chicken pieces in batches, frying until golden brown and cooked through (about 3-5 minutes per side). Remove and drain on paper towels.

          Make Bang Bang Sauce: In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and lemon juice until well combined. Adjust spiciness by adding more sriracha if desired.

            Assemble Bowls: In serving bowls, layer shredded lettuce as the base. Top with fried chicken pieces, cherry tomatoes, avocado slices, cucumber, and green onions.

              Drizzle Sauce: Generously drizzle the Bang Bang sauce over the top of each bowl and sprinkle with sesame seeds for garnish.
