1 pound boneless, skinless chicken breasts

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1 cup mayonnaise

3 tablespoons sweet chili sauce

2 tablespoons Sriracha (adjust to taste)

1 tablespoon soy sauce

1 tablespoon lime juice

Salt and pepper to taste

4 cups cooked jasmine rice

1 cup shredded carrots

1 cup chopped cucumber

1 cup edamame (cooked and shelled)

1 avocado, sliced

Chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Chicken: Cut the chicken breasts into bite-sized pieces and season with salt and pepper.

    Breading Process: Set up three bowls. In the first bowl, place cornstarch. In the second bowl, add the beaten eggs. In the third bowl, place panko breadcrumbs. Dip each piece of chicken first in cornstarch, then in eggs, and finally coat with panko breadcrumbs.

      Fry the Chicken: In a large skillet, heat about 1 inch of oil over medium heat. Once hot, carefully place the breaded chicken pieces into the oil and fry until golden brown and cooked through, about 6-8 minutes. Remove and drain on paper towels.

        Make the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, soy sauce, and lime juice. Adjust the spice level according to your preference.

          Assemble the Bowls: To serve, place a scoop of cooked jasmine rice in each bowl. Top with fried chicken, shredded carrots, cucumber, edamame, and avocado slices.

            Drizzle the Sauce: Generously drizzle the Bang Bang sauce over the top of each bowl.
