Beef with Oyster Sauce

1 lb (450g) beef flank steak, thinly sliced against the grain

3 tablespoons oyster sauce

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 cup snow peas, trimmed

4 garlic cloves, minced

1 tablespoon ginger, finely grated

1 teaspoon sesame oil

1/4 cup green onions, chopped (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef with oyster sauce, soy sauce, and cornstarch. Toss well to coat the beef evenly. Allow it to marinate for at least 30 minutes to absorb the flavors.

    Prepare the Stir-Fry: Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and let it heat until shimmering.

      Cook the Beef: Add the marinated beef to the skillet in a single layer. Sear without moving for about 2 minutes, then stir-fry for another 2 minutes until it is browned but not fully cooked. Remove from the pan and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Then, add the sliced red bell pepper and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

          Combine and Finish: Return the beef to the skillet, and pour in the sesame oil. Stir everything together and cook for an additional 2-3 minutes until the beef is cooked through and the sauce thickens slightly.

            Serve: Remove from heat and transfer the stir-fry to a serving platter. Sprinkle with chopped green onions and serve hot over cooked jasmine rice.
