Ingredients

For the Dumplings:

1 cup all-purpose flour

½ teaspoon salt

½ cup boiling water

1 tablespoon vegetable oil

1 teaspoon curry powder

1 cup finely chopped vegetables (carrots, bell peppers, and green onions)

½ cup finely chopped cooked chicken or tofu (optional)

1 tablespoon soy sauce

1 teaspoon minced ginger

For the Soup:

4 cups vegetable or chicken broth

1 tablespoon curry powder

1 teaspoon turmeric

1 can (400 ml) coconut milk

2 tablespoons fish sauce (or soy sauce for a vegetarian option)

1 tablespoon lime juice

Fresh cilantro, for garnish

Sliced red chili, for garnish

Instructions

Prepare the Dumplings:

    - In a bowl, mix the flour, salt, and curry powder.

      - Gradually add the boiling water while stirring until a rough dough forms.

        - Add the vegetable oil and knead for about 5 minutes until smooth. Cover it with a damp cloth and let it rest for 30 minutes.

          Make the Filling:

            - In a separate bowl, combine chopped vegetables, cooked chicken/tofu (if using), soy sauce, and minced ginger. Mix well.

              Form the Dumplings:

                - Roll the dough into a thin sheet and cut into 2-inch squares.

                  - Place a small spoonful of filling in the center of each square and fold over to form a triangle. Seal the edges by pressing them together with a fork.

                    Prepare the Soup Base:

                      - In a large pot, heat a little oil over medium heat. Add the curry powder and turmeric, stirring for 1 minute until fragrant.

                        - Pour in the broth and bring to a simmer. Add the coconut milk and fish sauce, stirring to combine.

                          Cook the Dumplings:

                            - When the soup is simmering, gently drop the dumplings into the pot. Let them cook for about 5-7 minutes until they float to the surface and are cooked through.

                              Finish the Soup:

                                - Stir in the lime juice and adjust seasoning according to taste.

                                  Serve:

                                    - Ladle the soup into bowls, garnishing with fresh cilantro and sliced red chili. Enjoy hot!
