Black Pepper Chicken

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black peppercorns, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon ginger, grated

1 bell pepper (red or green), sliced

1 onion, sliced

2 green onions, chopped (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

In a mixing bowl, combine the chicken pieces with black pepper, soy sauce, oyster sauce, and cornstarch. Mix well until the chicken is evenly coated. Let it marinate for at least 30 minutes.

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook until golden brown, about 4-5 minutes.

      Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

        Add the sliced bell pepper and onion to the skillet, stirring frequently. Cook until the vegetables are tender-crisp, about 3-4 minutes.

          Taste and adjust seasoning if needed; add more black pepper for an extra kick if desired.

            Remove from heat and garnish with chopped green onions.

              Serve hot over jasmine rice for a complete meal.
