Bruschetta Chicken Pasta

Ingredients
  

2 boneless, skinless chicken breasts

12 oz fettuccine or penne pasta

2 cups cherry tomatoes, halved

1/4 cup fresh basil, chopped

3 cloves garlic, minced

1/4 cup balsamic vinegar

1/4 cup olive oil

1/2 tsp salt

1/4 tsp black pepper

1/2 cup mozzarella cheese, shredded

Parmesan cheese, for garnish

Instructions
 

Cook Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or penne and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing it into strips.

      Make Bruschetta Topping: In the same skillet, add the remaining olive oil and minced garlic. Sauté for about 1-2 minutes until fragrant. Add the cherry tomatoes and balsamic vinegar, stirring to combine. Cook for an additional 5 minutes until the tomatoes are soft but still hold their shape.

        Combine Ingredients: Add the cooked pasta and sliced chicken to the skillet with the tomato mixture. Toss everything together, adding the reserved pasta water a little at a time to achieve the desired consistency. Stir in the fresh basil.

          Serve: Plate the pasta in bowls, topping with shredded mozzarella cheese. Optionally, sprinkle with Parmesan cheese and extra basil before serving.
