1 lb (450g) diced bacon

1 large onion, diced

3 cups frozen hash browns

2 cups shredded sharp cheddar cheese

1 cup milk

6 large eggs

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove from the skillet and drain on paper towels, but leave about 2 tablespoons of bacon fat in the skillet.

      Sauté the Onion: In the same skillet, add the diced onion and sauté until it's soft and translucent, about 5 minutes.

        Combine Ingredients: In a large bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper. Stir in the hash browns, cooked bacon, sautéed onion, and 1 ½ cups of cheddar cheese until everything is well combined.

          Transfer to Baking Dish: Grease a 9x13 inch (23x33 cm) baking dish with cooking spray or butter. Pour the mixture into the dish and spread evenly.

            Add Cheese Topping: Sprinkle the remaining ½ cup of cheddar cheese on top of the casserole.

              Bake: Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden and bubbly.

                Cool and Serve: Let the casserole cool for about 5-10 minutes. Garnish with chopped fresh chives before slicing into squares and serving.
