Ingredients

For the Cheesy Beef Burritos:

1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 packet (1 oz) taco seasoning

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup shredded cheddar cheese

4 large flour tortillas

1 cup salsa

1/2 cup sour cream

Fresh cilantro, for garnish

For the Crispy Fries:

4 medium russet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Optional: grated Parmesan cheese and chopped parsley for topping

Instructions

Preheat the Oven:

Preheat your oven to 425°F (220°C) for the fries.

      Prepare the Fries:

        - In a large bowl, toss the cut potatoes with olive oil, paprika, garlic powder, salt, and pepper until they're evenly coated.

          - Spread the fries in a single layer on a baking sheet lined with parchment paper.

            - Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

              Cook the Beef Filling:

                - In a large skillet over medium heat, add the chopped onion and sauté for 2-3 minutes until translucent.

                  - Add the minced garlic and cook for another minute.

                    - Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.

                      - Stir in the taco seasoning, black beans, and corn, cooking for another 2-3 minutes until heated through. Remove from heat.

                        Assemble the Burritos:

                          - Warm the flour tortillas in a dry skillet for about 30 seconds on each side to make them pliable.

                            - Lay a tortilla flat, and spoon about 1/4 of the beef mixture into the center.

                              - Top with a sprinkle of cheddar cheese and a tablespoon of salsa.

                                - Fold in the sides of the tortilla and roll it tightly to enclose the filling.

                                  - Repeat with the remaining tortillas and filling.

                                    Optional: Pan-Seared Finish:

                                      - If desired, heat a little oil in a skillet over medium heat. Place the assembled burritos seam-side down and cook for 2-3 minutes on each side until golden brown and crispy.

                                        Serve:

                                          - Slice the burritos in half and serve with sour cream, additional salsa, and garnish with fresh cilantro.

                                            - Plate the crispy fries alongside, and for extra flair, sprinkle with grated Parmesan cheese and parsley if desired.
