2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/4 cup mayonnaise

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus more for garnish)

1 teaspoon garlic powder

Salt and pepper to taste

8 slices of thick-cut bread (sourdough or ciabatta recommended)

1/2 cup unsalted butter, softened

1 teaspoon Italian seasoning

Optional: sliced tomatoes and spinach for added freshness

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, mozzarella cheese, cream cheese, mayonnaise, minced garlic, fresh parsley, garlic powder, salt, and pepper. Mix everything together until well combined.

    Make Garlic Butter: In a small bowl, mix together the softened butter with Italian seasoning and a pinch of salt. This will be used to spread on the bread.

      Assemble the Sandwich: Take a slice of bread and spread a generous layer of the garlic butter mixture on one side. On the unbuttered side, spread a portion of the cheesy chicken mixture, adding optional sliced tomatoes or spinach if desired. Top with another slice of bread, buttered side up, to create a sandwich. Repeat with remaining ingredients.
