Cheesy Masala Beans on Toast

Ingredients
  

1 can (15 oz) mixed beans (or kidney beans, black beans, etc.), drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust to taste)

1 teaspoon ground cumin

1 teaspoon garam masala

1/2 teaspoon smoked paprika

1/2 teaspoon turmeric powder

Salt and pepper to taste

1 cup tomato puree or canned diced tomatoes

1/2 cup cream cheese (or cheddar, for extra cheesiness)

Fresh cilantro, chopped, for garnish

4 slices of crusty bread (like sourdough or whole grain)

1 cup shredded mozzarella or cheddar cheese (for topping)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and green chili to the skillet, sautéing for another 1-2 minutes until fragrant.

      Stir in the ground cumin, garam masala, smoked paprika, and turmeric. Cook for an additional minute to toast the spices slightly.

        Pour in the tomato puree (or diced tomatoes) and bring to a simmer. Let it cook for about 5-7 minutes, allowing the flavors to meld.

          Add the drained mixed beans into the tomato mixture. Stir to combine, and season with salt and pepper to taste. Let it simmer for another 5 minutes.

            Gently mix in the cream cheese (or cheddar), allowing it to melt and create a creamy texture. You can add a little water if the mixture is too thick.

              While the beans are simmering, toast the bread in a toaster or on a hot skillet until golden brown and crispy.

                Preheat your oven broiler. Once the cheesy bean mixture is ready, spoon it generously over each slice of toasted bread.

                  Sprinkle shredded mozzarella or cheddar on top of the beans. Place the assembled toast on a baking sheet and pop it under the broiler for about 2-3 minutes, or until the cheese is bubbly and golden.

                    Remove from the oven and garnish with freshly chopped cilantro. Serve hot and enjoy!
