Chicken and Sweet Potato Rice Bowl

2 cups brown rice

1 lb (450g) chicken breast, cut into bite-sized pieces

2 medium sweet potatoes, peeled and diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

1 cup broccoli florets

½ cup corn (fresh or frozen)

¼ cup low-sodium soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

2 green onions, sliced (for garnish)

Sesame seeds (optional)

Instructions
 

Cook the Rice: In a medium saucepan, combine 2 cups of brown rice with 4 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the water is absorbed. Set aside.

    Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and lightly browned. Remove from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the remaining tablespoon of olive oil. Add the chicken pieces and season with smoked paprika, garlic powder, ground cumin, salt, and black pepper. Cook for about 6-8 minutes, stirring frequently, until the chicken is fully cooked and golden brown.

        Add Broccoli and Corn: Stir in the broccoli florets and corn to the skillet with the chicken. Cook for an additional 4-5 minutes, or until the broccoli is tender and bright green.

          Make the Sauce: In a small bowl, whisk together the soy sauce, honey, and rice vinegar. Pour the sauce over the chicken and veggies in the skillet. Stir well to coat all the ingredients evenly and cook for another 2-3 minutes until heated through.

            Assemble the Bowl: In serving bowls, layer the cooked brown rice, followed by the sautéed sweet potatoes and the chicken mixture. Drizzle any remaining sauce from the skillet over the top.
