Chicken Ramen Stir Fry (30 minutes)

Whip up a delicious Chicken Ramen Stir Fry that’s both quick and satisfying! Made with tender chicken breast, colorful veggies like bell peppers and snap peas, and flavorful aromatics, this dish is ready in just 30 minutes. The instant ramen noodles bring the perfect texture, while a savory sauce made with soy and sesame oil elevates every bite. 2 packs of instant ramen noodles (discard seasoning packets)

1 lb (450g) boneless, skinless chicken breast, sliced thinly

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 bell pepper (any color), sliced

1 cup snap peas, trimmed

2 cloves garlic, minced

1-inch piece ginger, grated

3 green onions, chopped (white and green parts separated)

1 tablespoon oyster sauce (optional for added depth)

1 tablespoon corn starch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Sesame seeds for garnish

Cook the Ramen Noodles: In a large pot of boiling water, cook the instant ramen noodles according to package instructions (about 3-4 minutes). Drain and set aside.

    Marinate the Chicken: In a bowl, combine sliced chicken breast, soy sauce, and sesame oil. Let it marinate for about 5 minutes while you prepare other ingredients.

      Stir-frying Veggies: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the green onion whites, minced garlic, and grated ginger, stir-frying for about 30 seconds until fragrant.

        Add Chicken: Increase the heat to high, then add the marinated chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes, stirring frequently.

          Toss in Veggies: Add the sliced bell pepper and snap peas to the skillet. Stir-fry for an additional 3-4 minutes until vegetables are just tender but still crisp.

            Combine Noodles: Add the drained ramen noodles to the skillet. Pour in the oyster sauce (if using) and mix everything well to combine.

              Thicken the Sauce: Stir in the corn starch mixture and cook for another minute until everything is well coated and the sauce thickens slightly.

                Season & Serve: Taste and season with salt and pepper as needed. Garnish with sesame seeds and remaining green onion tops before serving.
