1 pound ground chicken

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt to taste

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

In a large mixing bowl, combine the ground chicken, chopped parsley, minced garlic, smoked paprika, oregano, onion powder, black pepper, red pepper flakes (if using), olive oil, and salt. Mix well until all ingredients are evenly incorporated.

    Preheat your grill or grill pan over medium-high heat.

      If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.

        Take a handful of the chicken mixture and mold it around the skewer to form a sausage shape, leaving some space at the ends for easy handling. Repeat until the mixture is used up.

          Once the grill is hot, carefully place the skewers on it. Cook for about 5-7 minutes per side or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

            Remove the skewers from the grill and let them rest for a couple of minutes before serving. This will keep them juicy.
