Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons vegetable oil

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon brown sugar

1 teaspoon sesame oil

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Cooked jasmine rice or steamed rice, for serving

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced flank steak with soy sauce, brown sugar, and a pinch of salt and pepper. Mix well and let marinate for at least 20 minutes while you prepare the other ingredients.

    Prepare the Broccoli: Blanch the broccoli florets in boiling water for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer them to a bowl of ice water to stop the cooking. This will keep them vibrant and crunchy.

      Make the Sauce: In a small bowl, mix together the oyster sauce, cornstarch, water, and sesame oil. Stir well and set aside.

        Stir-fry the Beef: Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated beef, spreading it out in a single layer. Let it sear for about 2-3 minutes without stirring, until it gets a nice brown crust. Stir-fry for another 1-2 minutes until fully cooked and remove from the pan.

          Sauté Aromatics and Combine: In the same wok, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Return the beef to the pan along with the blanched broccoli. Pour the sauce over the beef and broccoli, stirring well to coat everything evenly.

            Cook Together: Stir-fry for another 3-4 minutes until the sauce thickens and everything is well combined. Taste and adjust seasoning with extra salt and pepper if needed.

              Serve: Remove from heat and garnish with chopped green onions. Serve hot over cooked jasmine rice or steamed rice.
