Chinese Chicken Fried Rice

Whip up this delicious Wok-Tossed Chinese Chicken Fried Rice in just 25 minutes! This easy recipe features day-old jasmine rice, diced chicken, and a colorful mix of veggies for a satisfying meal. Scramble some eggs, toss in garlic, and stir-fry everything to perfection with soy and sesame oils for flavor. Perfect for a quick dinner and a great way to use leftover rice. Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 cup cooked chicken, diced

2 tablespoons vegetable oil

2 large eggs, lightly beaten

1 cup mixed vegetables (carrots, peas, and corn)

3 green onions, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Prepare Rice: If using freshly cooked rice, spread it on a baking sheet to cool and dry out for about 30 minutes.

    Heat Wok: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

      Scramble Eggs: Add the beaten eggs to the wok and scramble until just set. Remove the eggs from the pan and set aside.

        Sauté Aromatics: In the same wok, add the remaining oil and sauté the minced garlic until fragrant, about 30 seconds.

          Cook Chicken and Veggies: Add the diced chicken and mixed vegetables, stirring constantly for 2-3 minutes until heated through.

            Add Rice: Add the cooled rice to the wok, breaking up any clumps. Toss everything together and let it fry for about 5 minutes, allowing some rice to crisp up.

              Season: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything together until well combined. Season with salt and pepper to taste.

                Finish with Eggs and Green Onions: Fold in the scrambled eggs and chopped green onions. Stir-fry for an additional 1-2 minutes until everything is well mixed and heated through.

                  Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve hot.
