Ingredients

1 lb chicken breast, cut into 1-inch cubes

1/4 cup honey

2 tablespoons chipotle in adobo sauce (adjust to taste)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

1 red bell pepper, cut into 1-inch squares

1 yellow onion, cut into 1-inch squares

Skewers (wooden or metal)

Instructions

Marinate the Chicken: In a large bowl, combine the honey, chipotle in adobo sauce, olive oil, minced garlic, smoked paprika, lime juice, salt, and pepper. Mix well to create the marinade.

Add Chicken: Add the chicken pieces into the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill or grill pan to medium-high heat.

Assemble Skewers: Thread the marinated chicken, red bell pepper, and onion pieces onto the skewers, alternating between chicken and vegetables.

Grill Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. Ensure the internal temperature of the chicken reaches 165°F (75°C).

Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve warm with extra lime wedges and your favorite dipping sauce.
