CILANTRO LIME CHICKEN THIGHS

4 large chicken thighs, skin-on and bone-in

1/4 cup fresh cilantro, chopped

Zest and juice of 2 limes

4 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon chili powder (optional for heat)

1/4 cup olive oil

Salt and pepper to taste

Lime wedges and extra cilantro for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the chopped cilantro, lime zest, lime juice, minced garlic, cumin, paprika, chili powder, olive oil, salt, and pepper. Whisk together to create a marinade.

    Add Chicken: Place the chicken thighs in the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

      Preheat Oven: Preheat your oven to 400°F (200°C).

        Prepare for Baking: Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper or in a cast-iron skillet, skin side up. Reserve the marinade for later.

          Bake the Chicken: Bake the chicken thighs in the preheated oven for about 35-40 minutes or until the skin is crispy and the internal temperature reaches 165°F (74°C). Baste with the reserve marinade halfway through cooking for added flavor.

            Broil for Crispiness (Optional): For extra crispy skin, turn on the broiler for the last 3-5 minutes of cooking. Keep an eye on them to avoid burning.

              Serve: Once cooked, remove the chicken from the oven and let it rest for a few minutes. Serve with lime wedges and garnish with additional cilantro.
