12 oz pasta (fusilli or penne)

1 lb boneless, skinless chicken thighs, diced

4 tbsp unsalted butter

3 cloves garlic, minced

1 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp smoked paprika

1 tsp onion powder

1 tsp garlic powder

½ tsp cayenne pepper (adjust to taste)

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced chicken thighs, season with salt, pepper, smoked paprika, onion powder, garlic powder, and cayenne pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes. Remove chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the Worcestershire sauce and Dijon mustard.
