Ingredients

12 oz fettuccine or penne pasta

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or penne according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: While the pasta cooks, season the chicken breasts with Cajun seasoning, salt, and pepper on both sides.

Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side, until cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.

Sauté the Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sliced red bell pepper, sautéing for another 3-4 minutes until the vegetables are softened.

Create the Sauce: Pour in the heavy cream and chicken broth, stirring well to combine. Bring the mixture to a gentle simmer. Gradually mix in the grated Parmesan cheese, stirring until melted and combined. Let the sauce simmer for 5 minutes to thicken slightly.

Combine Everything: Add the cooked pasta and sliced chicken back into the skillet, tossing everything to evenly coat the pasta and chicken in the creamy sauce. Stir in the halved cherry tomatoes and adjust seasoning with salt and pepper as needed.

Serve: Divide the creamy Cajun chicken pasta into bowls, and garnish with fresh parsley before serving. Enjoy your delicious creation!
