1 pound chicken sausage (sliced)

1 cup orzo pasta

1 medium onion (chopped)

3 cloves garlic (minced)

1 bell pepper (diced, any color)

2 cups baby spinach

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley (chopped, for garnish)

Sauté the Sausage: In a large skillet or pan over medium heat, add olive oil. Once hot, add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pan and set aside.

    Cook Vegetables: In the same pan, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until softened. Stir in the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.

      Add Orzo: Pour in the orzo pasta and stir to coat it with the oil and vegetable mixture. Toast the orzo for about 2 minutes.

        Simmer with Broth: Slowly add the chicken broth while stirring. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, stirring occasionally until the orzo is almost tender.
