1 lb chicken sausage, sliced

1 cup orzo pasta

2 cups chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

Fresh parsley for garnish

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

    In the same skillet, add the diced onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      Stir in the orzo pasta and cook for an additional 1-2 minutes, allowing it to toast slightly.

        Pour in the chicken broth and bring to a simmer. Cook uncovered, stirring occasionally, for about 8-10 minutes or until the orzo is al dente.

          Add the heavy cream, cherry tomatoes, dried Italian herbs, and the cooked chicken sausage back into the skillet. Stir well to combine and let it cook for another 2-3 minutes until warmed through.

            Fold in the fresh spinach and continue to stir until wilted.

              Season with salt, pepper, and stir in the grated Parmesan cheese until melted and creamy.

                Remove from heat, garnish with fresh parsley, and serve warm.
