Ingredients
  

200g spaghetti or your choice of pasta

1/2 cup heavy cream

2 tbsp Korean ssamjang (fermented soybean paste and chili paste)

2 tbsp sesame oil

1 clove garlic, minced

1 small onion, finely chopped

1/2 cup cooked and shredded chicken (optional)

1/2 cup spinach, chopped

1/4 cup grated parmesan cheese

Salt and pepper to taste

Sesame seeds and chopped green onions for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add sesame oil. Once hot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and the onion becomes translucent.

      Make the Sauce: Reduce the heat to low and stir in the heavy cream and ssamjang. Mix well until the ssamjang is fully incorporated into the cream. Add the reserved pasta water gradually to adjust the sauce consistency to your liking.

        Combine Ingredients: Add the cooked pasta to the skillet. Toss in the shredded chicken (if using) and chopped spinach. Stir well to coat all the pasta in the creamy ssamjang sauce. Cook for an additional 2-3 minutes until everything is heated through and the spinach has wilted.

          Finish the Dish: Stir in the grated parmesan cheese, mixing well until melted and creamy. Season with salt and pepper to taste.
