Creamy Mushroom and Asparagus Chicken Penne

2 cups penne pasta

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup asparagus, trimmed and cut into 1-inch pieces

1 cup mushrooms, sliced (button or cremini)

3 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of olive oil. Add the garlic, mushrooms, and asparagus. Sauté for about 4-5 minutes, until the vegetables are tender and mushrooms are browned.

        Make the Cream Sauce: Reduce heat to medium-low. Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer gently for about 3-4 minutes until it thickens slightly. Stir in the Parmesan cheese until melted and creamy.
