1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

Vegetable oil (for frying)

1/3 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (optional for extra heat)

Chopped green onions (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine the buttermilk, salt, and pepper. Add the chicken thighs and ensure they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.

    Prepare the Breading Mixture: In another bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper until well combined.

      Heat the Oil: In a deep skillet or fryer, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).

        Dredge the Chicken: Remove the marinated chicken from the refrigerator. Shake off any excess buttermilk and dredge each piece in the flour mixture until fully coated. For an extra crispy texture, dip the chicken back in the buttermilk and then again in the flour mixture.

          Fry the Chicken: Carefully place the breaded chicken thighs in the hot oil in batches. Fry for about 4-6 minutes on each side or until golden brown and cooked through. Make sure not to overcrowd the pan.
