Ingredients

500g beef rump, thinly sliced against the grain

1/2 cup cornstarch

1/4 cup all-purpose flour

1/2 tsp baking powder

1 tsp salt

1/2 tsp black pepper

2 cloves garlic, minced

1/2 cup sweet chilli sauce

2 tbsp soy sauce

1 tsp sesame oil

2 green onions, chopped (for garnish)

1 red bell pepper, sliced

1/2 cup vegetable oil (for frying)

Optional: sesame seeds for garnish

Instructions

Prepare the Beef: In a large bowl, combine the sliced beef with cornstarch, all-purpose flour, baking powder, salt, and black pepper. Mix well until the beef is evenly coated. Let it marinate for at least 30 minutes.

Make the Sauce: In a separate bowl, whisk together the sweet chilli sauce, soy sauce, minced garlic, and sesame oil. Set aside.

Heat the Oil: In a large frying pan or wok, heat vegetable oil over medium-high heat until shimmering.

Fry the Beef: Carefully add the coated beef slices to the hot oil in batches (don’t overcrowd the pan). Fry until golden brown and crispy, about 3-4 minutes per batch. Remove the beef from the oil and let it drain on paper towels.

Stir-Fry Vegetables: In the same pan, add a little more oil if needed and sauté the sliced red bell pepper for about 2-3 minutes until slightly softened.

Combine and Toss: Lower the heat and pour the sweet chilli sauce mixture over the sautéed peppers. Return the crispy beef to the pan and toss everything together until well-coated in the sauce.

Garnish and Serve: Remove from heat and garnish with chopped green onions and sesame seeds, if using. Serve immediately over steamed rice or alongside your favorite noodles.
