1 pound salmon fillet, skin removed

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional, for some heat)

1/2 cup cornstarch

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons vegetable oil (for frying)

Sliced green onions and sesame seeds for garnish

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, about 1-inch pieces. Set aside.

    Make the Marinade: In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes (if using).

      Marinate the Salmon: Place the cubed salmon in the marinade and let it sit for about 10 minutes to absorb the flavors.

        Coat the Salmon: In a shallow dish, mix the cornstarch, salt, and black pepper. After marinating, remove the salmon pieces from the marinade (reserve the marinade for later use) and lightly coat each piece in the cornstarch mixture, shaking off any excess.

          Heat the Oil: In a large skillet, heat vegetable oil over medium-high heat until shimmering.

            Fry the Salmon Bites: Add the salmon bites to the skillet in a single layer, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy. You may need to do this in batches.

              Prepare the Sauce: While the salmon is frying, pour the reserved marinade into a small saucepan and bring it to a simmer over medium heat. Allow it to simmer for about 3-4 minutes until slightly thickened.
