8 oz elbow macaroni (or your favorite pasta shape)

6 large eggs, hard-boiled and peeled

1/2 cup mayonnaise

2 tbsp Dijon mustard

1 tbsp apple cider vinegar

1/2 tsp garlic powder

1/4 tsp smoked paprika

Salt and pepper to taste

1/4 cup finely chopped green onions

1/4 cup diced celery

1/4 cup sweet pickles, chopped

Fresh parsley for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Eggs: In a medium bowl, mash the hard-boiled eggs with a fork, leaving some chunks for texture.

      Make the Dressing: In a separate large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper until smooth.
