For the Beef Filling:

1 lb ground beef (85% lean)

1 medium onion, finely chopped

2 cloves garlic, minced

1 Scotch bonnet pepper, finely chopped (adjust to taste)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon allspice (pimento)

2 tablespoons soy sauce

1 tablespoon ketchup

1 tablespoons brown sugar

Salt and pepper to taste

2 green onions, finely chopped

1/4 cup breadcrumbs

For the Pastry:

2 ½ cups all-purpose flour

1/2 teaspoon turmeric powder (for color)

1/2 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

1/2 cup ice water

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat a splash of oil over medium heat. Add the chopped onions and sauté until translucent.

      - Add the minced garlic and Scotch bonnet pepper, cooking for another minute until fragrant.

        - Stir in the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink.

          - Mix in the thyme, allspice, soy sauce, ketchup, brown sugar, salt, and pepper. Let it simmer for about 5 minutes, then add the chopped green onions and breadcrumbs. Remove from heat and let the filling cool.

            Make the Pastry Dough:

              - In a large mixing bowl, combine the flour, turmeric, and salt. Add the chilled butter and mix with your fingers or a pastry cutter until the mixture resembles breadcrumbs.

                - Gradually add the ice water, mixing until the dough comes together (don’t overmix). Cover the dough with plastic wrap and refrigerate for at least 30 minutes.

                  Assemble the Patties:

                    - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

                      - On a floured surface, roll out the pastry dough to about 1/8 inch thick. Using a round cutter or small bowl, cut out circles (about 4-5 inches in diameter).

                        - Place a generous tablespoon of beef filling onto one half of each circle. Fold the other half over to create a half-moon shape. Seal the edges with your fingers, then crimp with a fork for an extra secure seal. Repeat with remaining dough and filling.

                          Bake the Patties:

                            - Place the assembled patties on the prepared baking sheet. Brush the tops lightly with a beaten egg for a golden finish.

                              - Bake in the preheated oven for about 25-30 minutes, or until the patties are golden brown.

                                Serve:
