2 large cucumbers, thinly sliced

1/4 red onion, finely sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon fresh ginger, grated

1 clove garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

2 tablespoons sesame seeds, toasted

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Prepare the Cucumbers: Place the sliced cucumbers in a large bowl. Sprinkle with a little salt and let them sit for about 10 minutes to draw out excess moisture. Drain and pat dry with a paper towel.
