Easy Chipotle Ranch Grilled Chicken Burrito

2 boneless, skinless chicken breasts

1 cup chipotle ranch dressing (store-bought or homemade)

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup shredded cheese (cheddar or a taco blend)

1 cup corn (canned or frozen)

1 large avocado, sliced

1 medium tomato, diced

½ cup cilantro, chopped

4 large flour tortillas (10-inch)

Salt and pepper to taste

Olive oil for grilling

Marinate the Chicken: In a shallow dish, place the chicken breasts. Pour half of the chipotle ranch dressing over the chicken, ensuring it’s well coated. Let it marinate for at least 30 minutes (or up to 4 hours in the fridge).

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Drizzle a little olive oil on the grill. Remove the chicken from the marinade and season with salt and pepper. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let rest for 5 minutes before slicing.

      Prepare the Burrito Filling: In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes, and chopped cilantro. Add remaining chipotle ranch dressing to taste and mix well.

        Assemble the Burrito: Lay a flour tortilla flat on a clean surface. In the center, add a generous scoop of the rice and bean mixture, a few slices of grilled chicken, a handful of shredded cheese, and some avocado slices.

          Roll the Burrito: Fold in the sides of the tortilla, then roll it tightly from the bottom up. Repeat with the remaining tortillas.

            Toast the Burrito (Optional): For an extra touch, place the wrapped burritos seam-side down on the grill for 1-2 minutes on each side to achieve a crispy exterior.
