2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon chipotle ranch seasoning (store-bought or homemade)

4 large flour tortillas

1 cup cooked brown rice or cilantro-lime rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 cup diced tomatoes (fresh or canned)

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the olive oil and chipotle ranch seasoning. Add the chicken breasts, coating them well. Let them marinate for at least 30 minutes (or up to 2 hours in the fridge for extra flavor).

    Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let the chicken rest for 5 minutes before slicing.

      Prepare the Rice: If you haven't already cooked the rice, prepare it according to package instructions. For cilantro-lime rice, stir in fresh lime juice and chopped cilantro once cooked.

        Assemble the Burritos: Lay a flour tortilla flat on a clean surface. Start by layering the cooked rice, black beans, corn, and sliced grilled chicken in the center of the tortilla. Top with diced tomatoes, avocado slices, and shredded cheese.

          Wrap the Burrito: Fold in the sides of the tortilla and then roll from the bottom up to secure the filling. Repeat this process with the remaining tortillas.
