Ingredients

4 boneless, skinless chicken thighs

1/2 cup unsalted butter (1 stick), softened

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 teaspoon smoked paprika

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

Salt and pepper, to taste

1 tablespoon lemon juice

Optional: red pepper flakes for a bit of heat

Fresh greens (for serving)

Lemon wedges (for garnish)

Instructions

Prepare the Cowboy Butter: In a medium bowl, combine the softened butter, minced garlic, chopped parsley, chopped chives, smoked paprika, Worcestershire sauce, Dijon mustard, lemon juice, salt, pepper, and red pepper flakes (if using). Mix well until all ingredients are fully incorporated.

Marinate the Chicken: Season the chicken thighs with salt and pepper. Spread about half of the cowboy butter mixture over the chicken, ensuring they are well-coated. Let the chicken marinate for at least 20 minutes at room temperature, or up to 2 hours in the refrigerator for enhanced flavor.

Cook the Chicken: Preheat a large skillet or grill pan over medium-high heat. Add the marinated chicken thighs and cook for 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 75°C).

Baste with Remaining Butter: During the last few minutes of cooking, spoon the remaining cowboy butter over the chicken in the skillet to baste and infuse more flavor.

Serve: Once cooked, remove the chicken from the heat and let it rest for a few minutes. Serve on a bed of fresh greens, garnished with lemon wedges and additional parsley if desired.
