The concept of "Cowboy Butter," which serves as the inspiration for this dish, has its roots in Southern cuisine, where rich flavors and hearty ingredients reign supreme. Originally, Cowboy Butter was a flavorful compound butter made with a mix of herbs, spices, and garlic, often used as a condiment for grilled meats. The flavor profile is robust, often featuring a smoky undertone from paprika and a spicy kick from cayenne, making it an ideal companion for chicken and pasta.

Ingredients

8 ounces linguine pasta

2 tablespoons unsalted butter

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1 cup shredded cheddar cheese

1/4 cup chopped fresh parsley (for garnish)

Juice of 1 lime

Instructions

Start by cooking the linguine according to the package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.

In a large skillet, melt the butter over medium heat. Add the chicken pieces, garlic, smoked paprika, cayenne pepper, onion powder, oregano, salt, and black pepper. Stir to coat the chicken in the spice mixture.

Cook the chicken for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add the cherry tomatoes to the skillet and cook for another 2-3 minutes until they become soft and start to burst.

Reduce the heat to low, then pour in the heavy cream and stir. Gradually add in the shredded cheddar cheese, stirring until melted and combined.

Toss in the cooked linguine and mix well, adding reserved pasta water a little at a time to reach the desired consistency. Squeeze lime juice over the top and stir to incorporate.

Serve hot, garnished with chopped parsley and additional lime wedges on the side if desired.
