2 large cucumbers, thinly sliced

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls, drained

¼ cup fresh basil leaves

3 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

Salt and pepper, to taste

Instructions
 

Start by washing the cucumbers, then cut them into thin slices and place them in a large mixing bowl.

    Add the halved cherry tomatoes and mozzarella balls to the bowl with the cucumbers.

      Gently tear the fresh basil leaves and sprinkle them over the cucumber, tomatoes, and mozzarella mixture.

        In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper according to your taste.

          Drizzle the dressing over the salad and toss everything gently to combine and evenly coat the ingredients.

            Let the salad sit for about 5 minutes to allow the flavors to meld.

              Serve immediately on a plate or in a salad bowl, garnished with extra basil leaves if desired.
