Ingredients

1 lb ground pork (or beef)

1/3 cup panko breadcrumbs

1 egg

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1/4 cup green onions, chopped (plus extra for garnish)

2 tbsp soy sauce

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp ketchup

Sesame seeds (for garnish)

Instructions

Preheat the oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the meatball mixture: In a large mixing bowl, combine the ground pork (or beef), panko breadcrumbs, egg, minced garlic, grated ginger, and chopped green onions. Mix everything together until evenly combined.

Season the mixture: Add soy sauce, sweet chili sauce, and sriracha to the meat mixture. Mix gently but thoroughly to ensure the flavors are distributed without overworking the meat.

Form the meatballs: Using your hands, form small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet. Leave a little space between each meatball for even cooking.

Bake the meatballs: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through and golden brown on the outside.

Prepare the firecracker sauce: While the meatballs are baking, whisk together the sesame oil, rice vinegar, ketchup, and any remaining sweet chili sauce in a small bowl. This will be drizzled over the meatballs for extra flavor.

Coat the meatballs: Once the meatballs are done baking, remove them from the oven and drizzle the firecracker sauce over the top, ensuring they are well-coated.

Serve and garnish: Transfer the meatballs to a serving platter, garnish with extra chopped green onions and a sprinkle of sesame seeds for added crunch and flavor.

Enjoy: Serve the firecracker meatballs with your choice of steamed rice or noodles, and watch them disappear!
