2 large russet potatoes, diced

1 tablespoon olive oil

1 small onion, finely chopped

1 red bell pepper, diced

1 green bell pepper, diced

1 cup cooked breakfast sausage or chorizo, crumbled

4 large eggs

½ cup shredded cheddar cheese

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or green onions, for garnish

Cook the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender.

    Sauté Vegetables: Add the chopped onion and bell peppers to the skillet. Stir and cook for an additional 5-7 minutes until the vegetables are softened.

      Add Sausage: Stir in the crumbled breakfast sausage or chorizo along with the smoked paprika. Cook for another 4-5 minutes, mixing everything evenly.

        Cook the Eggs: Make four small wells in the hash mixture. Crack an egg into each well and cover the skillet with a lid. Cook until the eggs are set to your liking—about 5-7 minutes for runny yolks or longer for firmer yolks.
