20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: Boil a large pot of salted water and cook the jumbo shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the filling: In a large mixing bowl, combine chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, salt, pepper, and Italian seasoning. Mix until well combined.

        Stuff the shells: Carefully take each shell and fill it with a generous spoonful of the spinach and ricotta filling. Place the stuffed shells seam-side up in a baking dish.

          Add marinara sauce: Pour the marinara sauce evenly over the stuffed shells, making sure each shell is covered. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

              Garnish and serve: Remove from the oven and let it cool slightly. Garnish with fresh basil leaves if desired, and serve warm.
