20-24 large jumbo pasta shells

2 cups fresh spinach, chopped

1 ½ cups ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare Filling: In a large mixing bowl, combine chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix well until everything is nicely incorporated.

        Stuff the Shells: Carefully fill each cooked pasta shell with the spinach and ricotta mixture, being generous but careful not to break the shell.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of a large baking dish.

            Arrange the Shells: Place the stuffed shells in the baking dish on top of the marinara sauce in a single layer. Once all shells are arranged, pour the remaining marinara sauce over the top, ensuring the shells are well-covered.

              Top with Cheese: Sprinkle the remaining mozzarella cheese over the top of the shells and optionally add a bit more Parmesan cheese for extra flavor.
