20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

1 egg, lightly beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

2 cups marinara sauce (store-bought or homemade)

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Cook the Pasta: Begin by boiling a large pot of salted water. Add the jumbo pasta shells and cook according to package directions until al dente (about 10-12 minutes). Drain and set aside to cool.

    Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, egg, garlic powder, onion powder, and olive oil. Season with salt and pepper to taste. Mix until all ingredients are well incorporated.

      Stuff the Shells: Preheat your oven to 375°F (190°C). Take each cooled shell and spoon a generous amount of the spinach and ricotta mixture into each shell. Place the filled shells seam side up in a greased baking dish.

        Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, making sure they are well covered. Sprinkle the remaining mozzarella cheese on top.
