2 boneless, skinless chicken breasts, diced

8 oz (225g) penne pasta

2 tablespoons olive oil

3 garlic cloves, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup heavy cream

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

¼ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add diced chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.

        Introduce Spinach and Cream: Add the baby spinach to the skillet, stirring until wilted. Pour in the heavy cream, stirring to combine. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

          Combine Ingredients: Add the cooked pasta and chicken back into the skillet, tossing until everything is well coated in the creamy sauce. If desired, add red pepper flakes for a hint of spice.

            Finish with Parmesan: Stir in the grated Parmesan cheese and adjust the seasoning with salt and pepper to taste.
